Veggie Kabobs

Nothing starts off the summer like a BBQ, and nothing compliments a BBQ better than some awesome sides. Below are the veggie skewers I made this passed weekend for my family BBQ.

serving sizes: 15 skewers



  • 1/2 zucchini
  • 1/2 summer squash
  • 1/2 sweet onion
  • 1/3 eggplant
  • 3/4 red bell pepper
  • 3/4 yellow bell pepper
  • 3/4 orange bell pepper
  • 1 container of grape tomatoes

Dice all vegetables except tomatoes and place in pan. Dust with olive oil, salt, pepper, garlic powder, and if ย any favorite special spices (I used Cavenders Greek Seasoning).


Using regular BBQ skewers thread the veggies on in an alternating pattern.ย imageย I find it helpful to start and end with a tomato as it acts as a natural stopper and helps the other vegetables keep from falling off.

Place directly on the grill for about 5 minutes and then rotate.
